This dish originated in Peru’s Chifa, or Chinese Peruvian cooking tradition. Executive Chef Eddy Ancasi makes it by wok-frying prime beef in a soy-wine sauce with vine ripe tomatoes and red onions. Topped with French fries, this dish is a work of art.
